Making them non-alcoholic made it easy to pass these off as Strawberry Limeade Cupcakes so the kids could enjoy them too.
1 box white cake mix
1/2 c vegetable oil
1 1/2 c chopped strawberries
1 box strawberry Jello gelatin
1/2 c frozen Bacardi Margarita Mix (thawed)
1 small lime
Combine first 3 ingredients with mixer, add strawberries and beat. Mix gelatin and margarita mix, Jello may not dissolve completely and that's ok. Add Jello mix to cake mixture. Next add your juice from your lime. Mix all ingredients together until blended. Bake in lined cupcake tins, about 18 minutes until done. Cool completely.
1 8 oz cream cheese (room temperature)
2 c powdered sugar
2 - 4 limes
4 drops of pink food coloring
colored sugar (opt)
Twang (lemon-lime beer salt) or regular salt can be used (opt)
Beat cream cheese in mixer, slowly add powdered sugar. Add food coloring and juice from 2 limes - you can add the zest if you like. Mix will be thick and creamy. Ice cupcakes and chill until ready to serve. Sprinkle the sides with sugar salt mix.
