Lite Lemon Cupcakes

Love Starbucks lemon loaf and one day might actually try to make something like it but, today I wanted to go Lemon Lite. Here is a little gem I found. Nice, fluffy and lemony!

1 bx Lemon Cake mix
1 can Sprite or 7Up
2 egg whites

Mix everything together in a large bowl. Bake according to directions on cake mix box. I baked cupcakes for 22 minutes. Let cool.

Icing
8oz light cream cheese, softened
1 c marshmallow cream
1 tsp fresh lemon juice
1 tsp vanilla extract
1 c powdered sugar
yellow food color
yellow sprinkles

In medium bowl, stir together the cream cheese, marshmallow cream, lemon juice,food coloring, and vanilla until well combined. Gradually beat in powdered sugar. Makes about 1 3/4 cups.

After cupcakes cool, just frost them with your icing and add some sprinkles.

After you mix the frosting ... can I have the spoon? Those look so yummy!
Rachael had a variety of cupcakes at her wedding too...
J & S Watkins {nice bakers in our area} made them... My fav. were the lemon.

These look heavenly... especially nice flavor for summertime!
