Cherry Cheese Brownies

Yeah! I am so excited today AND I still got to use cherries after that disaster yesterday. This is another easy off the box recipe. Simple but still pretty, and they were delicious!


1 box any brownie mix (family size)
2 pkg (8oz each) cream cheese, softened
1/2 c sugar
1/2 c chopped and well drained maraschino cherries
1 egg
1/2 can of cherry pie filling, drained of syrup ( I even towel dried them a bit)

Heat oven to 350º
Grease the bottom of 13x9" pan with cooking spray. Beat cream cheese, sugar, maraschino cherries and 1 egg in medium bowl with whisk until smooth and set aside. Make your brownie mix according to directions on the box. I then spread half of the brownie batter into prepared pan and dotted it with pie filling cherries. Next, gently spread cream cheese mixture over the batter. Now spread remaining brownie batter gently over cream cheese and sprinkle with the rest of your pie filling cherries.
Bake in 350º oven for 40-43 minutes or until done.
Cool completely and refrigerate to let it set up. Dig in. 
Refrigerate any leftovers.

What a combo! I have always kept my fruit and chocolate apart...but these look wonderful. One should branch out!! "grin"

Oh, I am salivating! Do you think there is something wrong with a person who sits and reads food blogs until past midnight? Actually I am waiting up for the two teenagers to come home and have found that this is very relaxing and the time goes quickly, but it sure makes me hungry. At least I am not in the kitchen at midnight making these delish brownies. I will be making these at a decent hour!

Mickey!!!!! These brownies are to die for!!! - I just love anything with "cherries" in it (i've probabaly mentioned that before...:-) - can't wait to make these brownies! :-)
