I have had this recipe for so long that I don't even know where I got it....really....years I think. Anyways, I have done sheet cakes before but never one with peanut butter. Yep, peanut butter. As some of you know my Little One has a super crush on peanut butter so I made this in hopes of making her smile at lunch time tomorrow :)
First you bring these ingredients to a boil:
1/4 c peanut butter
1 c water
1/2 c butter
Then sift these and add to mix above:
1 c sugar
1 c brown sugar
2 c flour
1 tsp salt 1 tsp baking soda
Next add:
2 eggs
1/2 c buttermilk
1 tsp vanilla extract
Stir everything until completely blended and pour into greased jellyroll pan. Bake at 350 for about 25 minutes or until toothpick inserted comes out clean.
Frosting:
3/4 c butter
6 Tbsp buttermilk
1/2 c peanut butter
Mix in pot and bring to a boil, remove from heat and add:
3 1/2 c sifted powdered sugar
1 Tbsp vanilla
Mix well and pour over warm cake. This will be pretty thick so just slop it on and move it gently along as it melts. Let cool completely and then cut into squares. Perfect for all these tailgate parties!
