Cheddar Herb Beer Bread

Must be the cool mornings we are having because I have been wanting to bake a nice loaf of bread. I had Our Treasured Homes' Cottage Cheese Bread in mind but Avril over at Baking and Creating with Avril got to it first :) Now I know I have to try it! I didn't want to have a copy cat post today so I decided to try the next bread recipe in line. This is it, a simple easy cheddar beer bread recipe. This is a thick rustic kind of bread, perfect with chili...... ...nevermind...it was good straight out of the oven.
3 c flour
2 tsp baking powder
1 tsp salt
1/2 tsp pepper
1/4 c sugar
1/2 tsp cayenne
1 tsp thyme
1 tsp rosemary
1tsp chives
12 oz beer
1/2 tsp parsley (for top)
1 1/2 c sharp cheddar cheese
In large bowl mix flour, baking flour, salt, pepper, sugar, cayenne, and herbs until well blended. Pour in your beer and incorporate everything. Now add 1 cup of cheddar. This batter will be thick and sticky but worth it. Dump into a greased loaf pan and spread top evenly (I used a wooden spoon that I sprayed with cooking spray).
Bake 50- 55 minutes or until toothpick test comes out clean. Top with remaining cheddar during the last 5 minutes of baking.
Sprinkle with chopped parsley and cool in pan for about 10 minutes. Completely on rack.
