Found these over at TK and they looked so simple and with caramel and oats - ok ya got me. It got me to thinking though and I have another switch-a-roo planned for these oat bars but I ran out of oats? I know, who runs out of oats?
Cookie layer
1 c flour
1c quick oats
1/2 tsp baking soda
1/4 tsp salt
3/4 c brown sugar
3/4 c butter, melted
Caramel layer
3/4 c caramel topping (yes that is the same as ice cream topping)
3 tbsp flour
3/4 c choc chips
Preheat oven to 350º and spray 8x8 baking dish and set aside.
In large bowl combine flour, oats, baking soda, salt, and brown sugar - mix to combine. Pour in melted butter and mix everything. Press half of this oat mixture into prepared pan, set aside the remaining mix.
While oatmeal mix is baking, mix caramel topping and flour until smooth and you see no flour bumps.
When oatmeal layer is done take it out of oven and sprinkle with your chocolate chips and drizzle with the caramel topping. Finish it off with the remaining oatmeal layer that you set aside.
Bake for another 10 minutes or until oatmeal is golden brown.
Now the hard part. Do not cut when warm. Make sure you let it cool down and set up completely, otherwise it will be too sloppy to cut.

LOVE these d'lish Oatmeal Caramel Squares....I always have a soft spot for anything baked with oatmeal...and then add in the caramel and I just melt! :-)
