Better late than.....oh you get the idea. It's been busy around here but I did managed to make some cookies for our 12 Weeks of Christmas Cookies! This is week 4! Love these.
5 oz bittersweet choc (60%) chopped up3/4 c flour
1/2 tsp cinnamon
1/4 tsp baking powder
1/4 tsp salt
dash of black pepper
dash of red pepper
1 1/4 c sugar
1/4 c butter, softened
1 lg egg
1 tsp vanilla
Preheat oven to 350º. Melt chocolate in small glass bowl on high for about 1 minute or until almost melted, stirring until smooth. Cool to room temperature.
Combine flour and soft butter in a large bowl and beat on medium speed until well blended. Now add egg to flour mix and beat well, next add your cooled chocolate and vanilla until everything is blended.Drop dough by leveled tbsp-fuls about 2" apart on sheets lined with parchment paper. Bake in 350º oven for 12 minutes or until almost set. Remove from oven and cool for about 2 minutes until set. Remove to cool completely on wire racks.
I wanted some color and spice to finish them off, so I made a little icing to pop in the middle.
confectioners sugar
dash of cinnamon
dash of ground red pepper
a couple of tablespoons of milk
red food coloring
Mix everything until you get the consistency you want for icing. Drizzle it on or pipe a big round circle on them. They were perfect.
