Cherry Snowballs

Before I start on my crazy Thanksgiving stuff I thought I should squeeze in my cookie post. I know some of you are right there with me :)

Alrighty! I am lucky or unlucky that the floor men haven't gotten to the kitchen yet, so I thought I'd try these little gems while I can still see the oven.

Truthfully I really worried about these from the moment I saw them, everything was a little different? I don't know...even the dough felt strange but let me tell you...they were fantastic!

They are sweet, cute and festive - I think next time I will make them without the cherry and dip them in chocolate! You have to try them.

1 c butter, softened
1/2 c confectioners' sugar
1 tbsp water
1 tsp vanilla extract
2 c flour
1 c quick-cooking oats
1/2 tsp salt
maraschino cherries
Icing:
1 1/2 c confectioners' sugar
1/4 c milk
2 c flakes coconut
Preheat oven to 350º.
In a mixing bowl, cream butter, sugar, water and vanilla. Combine flour, oats and salt and gradually add to your creamed mixture. Shape a tablespoonful of dough around each cherry, forming a ball. Place 2" apart on ungreased baking sheet. Bake at 350º for 18-21 minutes or until bottoms are browned. Remove to wire rack to cool.
To make your icing, combine sugar and enough milk to achieve smooth dipping consistency. Dip each cookie and roll in coconut.
Store in airtight container.
