Arroz Con Leche (Mexican Rice Pudding)

 It's 9pm and it's 32º right now and the temperature is dipping to 28º tonight. Burr! We are not use to that cold cold, you know what I mean. Here in Texas we get our sweaters out at 70º...really, no really, we do.  Well it's perfect weather for something warm and cozy. My mother use to make arroz con leche many years ago but of course she  didn't leave me a recipe so I used this one. It is smooth, rich and creamy and of course super easy. You can eat it warm or cold. We of course will be eating it steaming hot.
2 c cooked white rice
1 c sugar
1 tsp cinnamon
1 c sweet condensed milk
2 quarts whole milk
2 cinnamon sticks
2 tbsp vanilla
cinnamon for tops
Bring whole milk to a boil and add cinnamon sticks. Stir in rice and cover. Simmer for about 20 minutes. Remove from heat and remove cinnamon sticks then add condensed milk and sugar. Stir until well incorporated. Return to heat and simmer for another 5 minutes or so until it starts to thicken (mine took about 10 minutes). Remove from heat and add your vanilla.
Sprinkle with cinnamon and eat or chill to eat later.

I just LOVE the looks of this wonderful Rice Pudding!!! Goodness do I wish I had a HUGE bowl right NOW! I will have to make this pudding VERY soon! LOVE the idea of all that cinnamon goodness in it! :-)
