Nutty Nilla balls

This week I wanted to try a recipe that I could let the kids help out with...yes sometimes I like them to help out. These cookies are perfect for kids, from crushing cookies in a ziploc bag to forming them into balls and decorating them. Let the kids help with these, lots of fun for little hands (clean hands that is). We made some with rainbow sprinkles and Christmas ones too. 
2 1/2 c crushed Nilla wafers (or vanilla wafers)






1 c chopped nuts 

1 c choc chips
1/2 c sugar
 1/4 c light corn syrup
1/4 c water
1 tsp orange extract
Lots of sprinkles
First crush your wafers and chop your pecans - set aside. Combine chocolate chips, sugar, corn syrup and water in a glass bowl. Place bowl over a simmering pot of water to melt. Stir until completely melted and smooth.
Stir in orange extract and remove from heat.
Mix your wafers and nuts in a bowl and pour the chocolate mixture all over that mix.  Now mix everything until evenly coated. Using your hands (yes it's messy), form your "dough" into small balls and roll into sprinkles.
I've heard these are best after they sit a couple of days. They are pretty good now...but I will save some to marinate :)
For you sprinkle haters just dip them in melted chocolate instead!

Yummy and VERY kid friendly treat to make and eat! They remind of me of sprinkled munchkins. :-)
