Chocolate Streusel Cupcakes

I think I am on a muffin kick....been thinking about that crunchy topping since I made those cinnamon muffins a couple of days ago. I really wanted to do cupcakes though. These are my compromise. Cupcakes with streusel topping! Oh my! 
The topping by itself was incredible....on a cupcake......they were made for each other :)


1 bx Devils food cake mix (reserve 3 tbsp for top)
1/4 c graham cracker crumbs
2 tsp instant coffee granules or crystals
1 tsp cinnamon
1 tbsp cocoa powder
1 c water
2 eggs
1/4 c veg oil
Topping:
3 tbsp cake mix
1/2 tsp cinnamon
2 tbsp quick cooking rolled oats
2 tbsp brown sugar
1 tbsp butter
Heat oven to 350º, line muffins pan with cupcake liners and set aside. You can also bake in a greased 8" square pan but, I like cupcakes.
In medium bowl combine cake mix, graham cracker crumbs, coffee and cinnamon, mix well. Add water, eggs and oil, mix until blended. Pour into prepared pan.
With the 3 tbsp of cake mix, add oats, cinnamon and brown sugar and mix well. With a pastry blender or fork, cut in butter until it resembles coarse crumbs. Sprinkle evenly over batter.
Bake at 350º for 18-22 minutes or until toothpick comes out clean. This recipe gave me 16 fat cupcakes.

I love anything with a streusel topping. Looks like a delicious idea to put it onto a cupcake.
