Tropical Cupcakes

Although we might be the only ones without snow right now it's still pretty chilly.  I wanted to send something up to Big Daddy's hard workers so I decided to send them a Tropical "Vacation" cupcake. Coconut, pineapple, nuts, rum....all exploding out of a  little paper cup.....maybe I should send each of them a lei too or maybe a space heater :)
1 bx yellow cake mix
1 (3oz) bx pineapple Jello
1/2 c veg oil
3/4 c orange juice
1 tsp lemon extract
1 tsp rum extract (or real rum)
4 lg eggs
1/2 c chopped pecans
1/2 c chopped candies cherries
1/2 c sweetened coconut
Heat oven to 350º and line muffin tins with paper liners and set aside. Place first 7 ingredients into a large mixing bowl, beat for about four minutes on medium speed. Add pecans, cherries and coconut and stir until blended. Bake for about 22 minutes or until tops are springy and toothpick test comes out clean. Keep an eye on these - they will brown on you.
Lemon OJ Icing
3 tbsp butter, melted
1 c powdered sugar, sifted
3 tbsp fresh lemon juice
3 tbsp oj
Combine all ingredients in a small bowl, mixing well -add more powdered sugar to thicken it to your liking. Spread over cupcakes.
