Found these mini bundt pans last week and got them because I love anything mini - I figured I would find something to do with them :)
I've never done monkey bread....I know.... I know. Well, I found this easy basic recipe online but, wanted something a little different and I knew those mini bundts would work perfectly. Yes they were easy and all the kids loved them!
2 cans buttermilk biscuits (not the flaky layer kind)
4 tbsp unsalted butter
4 tbsp maple syrup
1 tbsp cinnamon
1 tbsp cocoa powder
1/3 c sugar
Open can of biscuits and cut each round into small pieces, I cut each of mine into 8 pieces - set aside. In a a small bowl, microwave 4 tbsp butter and maple syrup on high until melted - set aside. In another bowl, mix 1/3 c granulated sugar, brown sugar, cocoa powder and cinnamon until blended and set them aside too. Line up your stations and start :)
Dip each ball (piece)into the melted maple butter mix, then roll in the sugar mix. Place coated balls ( about 7 or 8 )into your muffin tins, press down gently . I always over-fill :) I loved using those mini bundt pans.
Bake about 15- 17 minutes until cooked through and nice and golden.
While they are baking you can mix confectioners sugar, heavy cream and vanilla. Stir until smooth and creamy. While muffins are still warm, drizzle the glaze over the muffins and sprinkle them with mini chocolate chips. Serve warm....just look at all that gooey stuff :)
I ended up making more of the sugar mix, I guess I over dip too .

Oh MY, that monkey bread looks mighty delicious. That is a great idea to do separate minis. I usually make it at Christmas time if I make it, I didn't this Christmas for some reason, guess I forgot about it!! lol
I might just have to do that for some occasion soon.
