Little Oatmeal Cakes

You know her and don't lie....you love her. I do. Little Debbie has been around for ever...well 51 years at least. I came across this recipe and had to run and make it. These were even better than the "real" ones. Of course I had to "Mickeyfy" them, I just added cocoa powder and chocolate chips. That's right...cocoa and chips...that's all they ever needed :)
Cookie ingredients
1 c margarine
3/4 c dark brown sugar
1/2 c sugar
1 tbsp molasses
1 tsp vanilla
2 eggs
1 1/2 c flour
1/2 tsp salt
1 tsp baking soda
1/8 tsp cinnamon
1 1/2 c quick oats
1 c chocolate chips

Cream Filling
2 tsp very hot water
1/4 tsp salt
1 (7oz) jar marshmallow creme
1/2 c shortening
1/3 c powdered sugar

1 tbsp cocoa powder
1/2 tsp vanilla

To prepare cookies, cream margarine, sugars, molasses, vanilla and eggs. Combine flour, salt, baking soda, cocoa powder and cinnamon - add to creamed mixture. Then mix in your oats. Drop by tbsp on ungreased sheets - careful, they do spread. Bake at 350º for 10-12 minutes, or until they are golden brown. They might look a little moist but don't overcook them. While they were still soft I used a round cookie cutter to make mini sized ones.
While cookies are baking, prepare the filling.
In a small bowl dissolve the salt in the hot water - set aside to cool. Combine marshmallow creme, shortening, powdered sugar, cocoa and vanilla in a medium bowl, mix on high until fluffy. Add the cooled salt water and mix well. Spread your filling on the flat side of cookie and press another on to it to make sandwich.

Your post brings back fond memories of our trips to the States when my children were young. Unavailable in Canada, discovering Little Debbie products was like finding a gold mine. My kids couldn't believe their eyes when they first spotted these sweet treats.
