Wanted to make something with fruit in it this week - but not too fruity...ya know what I mean. A fruit buckle sounded like a good begining....make it into a cupcake and add chocolate chips of course. I probably can pass it off for a nice muffin in the morning, especially all dressed up**
1 1/3 c flour1 1/2 tsp baking powder
1/4 tsp salt
1/3 c butter, at room temp
1/2 c sugar
1 lg egg
1/2 c plus 1 tbsp yogurt
1/3 c mini choc chips
1 1/4 c coarsely chopped fresh strawberries
Topping:
1/3 c oatmeal
1/4 c sugar
3 tbsp chilled butter, diced
1/2 tsp cinnamon
2 tbsp mini choc chips
Preheat oven to 350º and adjust oven rack to middle position. Oil 12 standard or 6 jumbo muffin cups. I just used paper liners.
Sift together the flour, baking soda and salt. Set aside.
In a large mixing bowl, beat the butter until creamy. Gradually add 1/2 c sugar and beat for about 1 minute until well blended. Add egg and beat for another 2 minutes until light and fluffy. Beat in yogurt until mixed.
Add all sifted flour add gently stir until is just smooth - it will be pretty stiff. Divide batter evenly among muffin pans - set aside.
Combine all topping ingredients in a bowl of a food processor or chopper and pulse until everything is blended to resemble coarse crumbs. Sprinkle the mixture over the batter in muffin cups and gently press in.
Bake 25-35 minutes (depending on what size you used) or until topping is lightly browned. Cool on wire rack.
**I printed out this template here and just trimmed the top and hole punched some little holes in them, and then wrapped and taped them up :)
