Jimmy Fallon's Crock Pot Chili/My Frito Pie

Love the idea of this recipe and love Jimmy Fallon so I had to try it. I changed it up a bit but, you can find his original recipe over at Martha Stewart's. We used our chili to make Frito Pies- in Texas you just pour some corn chips into a bowl and add chili, cheese and toppings and you are good to go. When outdoors sometimes we just open up single serving bags and scoop some chili in them and eat it on the go :)
2 tbsp olive oil
3 1/2 lbs ground beef
coarse salt and fresh pepper
1 lg white onion, chopped (I used a yellow one)
3 cloves of garlic, finely chopped
1/2 habanero chile, seeded and thinly chopped
1/4 c chili powder
1 tsp dried oregano
1 1/2 tsp cumin
1/4 tsp cayenne pepper
1  (15oz)can of diced tomatoes with juice 
1/3 c chopped cilantro plus extra for serving
1 (12oz) bottle of amber beer
1 can kidney beans (drained)
1 can pinto beans (drained)
Tortilla chips for serving (We used Fritos corn chips)
shredded cheddar for serving
chopped tomatoes for serving
sour cream for serving
lime wedges for serving
In a large skillet, heat 1 tbsp of olive oil over medium heat, add beef and cook until no longer pink -about 3 minutes. Season with salt and pepper, drain and set aside.
Add remaining olive oil to skillet and reduce heat to medium. Add onions, garlic and habanero, season with salt. Cook until onions are translucent- about 5 minutes.
In a 6qt crock pot, combine beef, onion mixture, chili powder,oregano, cumin and cayenne pepper, stir to combine. Add tomatoes, cilantro and beer. Stir, cover and cook on high, stirring occasionally, for 5 hours.
Add kidney beans and season with salt and pepper. Continue to cook uncovered until thickened - about 30 more minutes,
Garnish with cilantro and serve with desired toppings.
