Coconut! Ah... it screams summer to me. Smelling all tropical and stuff :) so....I wanted to make some ol cakeballs/truffles (whatever you call them) but I wanted to go Mounds-like. These were yummy of course and cute to boot. Love these bite sized poppers.
1 bx white cake mix (bake according to directions and cool)
3/4 c coconut milk
1/4 c sweetened condensed milk
1 c sweetened coconut
chocolate candy melts
Bake cake and cool. Line a baking pan or sheet with parchment paper and set aside. In a large bowl, crumble your baked cake (*I just used half of the cake for coconut ones and half for coffee flavored). Add condensed milk, coconut milk, and shredded coconut. Using your hands, combine all the ingredients until you can form them into nice little balls. Place on your prepared baking sheet and refrigerate about 1 hour.
Melt your candy melts. Dip your cakeballs into the melted chocolate, turning to coat. Return each one to baking sheet to harden. Sprinkle with coconut if you like. Refrigerate.
*To make coffee ones I just omitted coconut and coconut milk. Instead I just dissolved a tbsp of instant coffee into my condensed milk. If you need to, add a couple of drops of milk to get to the consistency that you need to roll into balls. I then sprinkled them with a little cocoa powder.
