I came across this Baumkuchen/ Schichttorte (Tree Cake) recently. It totally intrigued me. Really, I have never seen anything like it. Anyways, its a layer cake (like 12-14 layers) that is broiled? Yes broiled....layer by layer. I knew I had to try it but was a little nervous. I used a boxed cake mix to make it even easier. You will need two boxes if you want to be fearless and do the 12 layer size :0 It was pretty easy and I just went for it....well the six layer one.
1 bx cake mix ( I used Butter Pecan)
apricot jam (melted)
frosting
Preheat oven to broil/bake at 450º. Move rack to upper top position - about 5"-6" from heat. Grease a springform pan and set aside. Mix cake mix according to directions. Pour 1 cup of cake batter into your prepared pan, gently smooth it around pan - it will be a thin layer. Broil for 1- 1 1/2 min. or until golden. It's thin so it doesn't take much, don't let it burn. Brush a thin, thin, layer of melted jam over layer while still hot. Now repeat until your batter is gone. Cool cake, remove sides and frost. I threw some crushed chocolate covered graham crackers on to the sides to pretty it up. It's not a Baumkuchen but I love it! Taking it to Dad's cause I really want to do the 12 layer one .....you just wait and see :)
