Chocolate Banana Muffins

Somehow I always end up with some over ripe bananas......I usually freeze them for smoothies cause I hate to throw them out. This time I made muffins with them. Chocolate Muffins. Super moist and used those bananas too.
3 lg bananas
1 c sugar
1 egg - slightly beaten
1/3 c butter, melted
1 c flour
1/2 c cocoa powder
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
Preheat oven to 375º and line muffin tins with paper liners* and set aside.
In large bowl mash bananas with fork, then mix in sugar, egg, and butter. In a separate bowl whisk together the flour, cocoa powder, salt, baking soda, and baking powder. Now gently fold it into your banana mixture. Your batter will be just moist and might be a little lumpy. Don't over mix.
Divide your batter into cups and bake for about 20 minutes or until a toothpick inserted down the middle comes out clean. Transfer to rack to cool. Drizzle with melted chocolate if you like.
*If you want to try baking tulip cups, they are easy. Cut  4-5" squares out of parchment  paper, press them into muffin tins. When paper comes up just run your fingernail around bottom seams to help them keep their shape.
