School started today!!!!!! Too bad.....I am still in summer mode. So I'm gonna pretend I am still on summer break....not going to even go outside today.....it is soooooo hot outside. I decided to make some Orange Creamsicle Cupcakes to keep me in the mood :)
1 bx (3 oz) Orange Jello mix
1 tsp orange extract
1 1/4 c oj
1 box Vanilla cake mix
1/3 c veg oil
3 whole eggs
Vanilla frosting
Preheat oven to 350º
1 c shortening
1 1/2 tsp vanilla
3 tsp food coloring
1 tsp orange extract
5 c confectioners' sugar
2 Tbsp whipping cream
Cream your butter and shortening until well blended and smooth, scrape sides as needed. Slowly add sugar - one cup at a time until blended. Add whipping cream, vanilla, and orange extract - beat at the highest speed until super fluffy about 1 minute. Scrape sides as needed. If you are dyeing your frosting, add your drops one at a time until you get color you need.

In mixing bowl combine Jello powder, orange extract and oj. Next add in cake mix and blend on medium until incorporated. Add in oil and the eggs, blend well. Line cupcake tins with paper liners and pour batter evenly into each one. Bake until done, about 20-25 minutes or until toothpick inserted comes out clean. I just poked each with the end of a wooden spoon and piped them full of frosting, then cover as usual.
