These were so cute that I had to make them. They look like the belong at a picnic don't they ? And....they fit perfectly in your mouth :) They are addicting!
3 1/2 c flour
2 tsp baking powder
1 tsp salt
2 (8oz) pkg cream cheese, softened
2 1/2 sticks of butter, softened
1 1/2 c sugar
2 lg eggs
2 tsp vanilla extract
1 c graham cracker crumbs
2 cans cherry or blueberry pie filling
Combine sugar, baking powder and salt in a bowl - set aside. In mixing bowl, beat cream cheese, butter and sugar until smooth and creamy - about 2 minutes. Add eggs and vanilla and mix until incorporated. Reduce speed to low and slowly add the flour mix and mix until combined. Refrigerate about 30 minutes or more until dough is firm.
Preheat oven to 350º. Line 2 baking sheets with parchment paper.
Pour graham cracker crumbs into a shallow bowl.
Take cookie dough out of fridge and roll into 1 1/2" balls, then roll balls into graham crumbs. Place each ball on prepared baking sheet about 2" apart. Using a Tbsp measure, make an indention in center of each ball. Place 3 cherries or 3 blueberries in center of each cookie.
Bake until golden brown around edges - about 12-14 minutes. Cool on sheet for about 5 minutes then transfer to wire racks to cool completely.
This makes a lot of cookies - I rolled half of dough and rolled in crumbs then put in freezer for quick cookies another day :)
