It's National Cheesecake Day!

I saw this over on Chobani's website sometime ago...I did change mine up a bit. They used Stevia, almond butter and bran cereal I think. Oh well this is my take on it. It's perfect for me since my house does not like cheesecake....I love it.
Made myself my own little one! Better than eating a whole one right....might even save some calories there huh? :)
Filling:
6oz Plain Greek yogurt
1/2 tbsp instant cheesecake flavor pudding mix (I used white chocolate flavor)
Crust:
1/2 c graham crust
1/2 c crushed cereal (I used Honey Flakes)
4 tbsp water
1 tbsp melted unsalted butter
1/4 tsp sugar
1/4 tsp cinnamon
Topping:
1/2 c blueberries
1 tbsp sugar
1 tsp lemon juice
Pretty easy. Mix yogurt and pudding mix together and set aside. In small mixing bowl stir together graham crumbs, cereal,sugar and cinnamon until blended. Add butter and water and stir until moist and sticky. Dump into individual spring-form pan and pack evenly along bottom and up sides. Spoon in filling and smooth top so it's even(not that you care) refrigerate until cold and set - about 20 minutes.
Mix blueberries, lemon juice and sugar in pot over heat until they burst and give you juice - let cool and pour over you little cake.

It looks fabulous! Sometimes I also cut it down to a smaller portion since I am the only one who ends up eating it all! :)
