Another easy one. You'll love these - they were soft and chewy... they were delicious. Next batch will be without chocolate but adding chopped pecans.
1 bx cake mix (I used white cake mix)
2 c quick oats
1 c sugar
1 c veg oil
2 eggs
1 c coconut
1 1/2 tsp vanilla
1/2 c choc chips plus extra for melting
Preheat oven to 350º.
Mix cake mix, oats and sugar together -set aside. Using a different bowl, combine oil and eggs. Now add oil mix to cake mix - stir everything until completely blended. Lastly add your vanilla extract. Drop by tablespoonfuls onto paper lined baking sheet. Bake 10-12 minutes. Cool a few minutes then transfer over to wire rack to cool completely.
Melt chocolate chips to dip cookies into and roll them in coconut.
They had a crisp chewy texture but still soft on the inside, super good.
