I never really tried Churros before we went to Paris last year, but lo and behold we came across a stall making them at the flea market. My son had to have some so we stopped and got a cup full of them. They even came with a side of melted chocolate. Heaven I tell you. I haven't ordered them again - didn't want to mess up my memory. I found this recipe somewhere and I thought I'd try it out. Super easy and they were really good, especially with a side of melted chocolate fudge.
1 1/2 c flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 c sugar
1/3 c unsalted butter, room temp
1/2 tsp vanilla
1 egg
1/2 c milk
1/2 stick of butter (melted)
1/2 c sugar
1 1/2 tsp cinnamon
Preheat oven to 350º.
In medium bowl, whisk together flour, baking powder, salt, cinnamon and nutmeg. Set aside.
Using mixer, beat together sugar and butter on medium-high speed until light and fluffy, about 2-3 minutes. Add egg and vanilla and beat until combined.
Turn your speed down to low and slowly add flour mix, alternating with milk - starting and ending with flour. Mix until it's all incorporated. Your batter will be thick.Using a small cookie scoop, fill each muffin tin (I just piped little circles onto my parchment paper lined cookie sheet) and bake for 15-18 minutes or until they are golden.
While they are baking, melt butter in a bowl and mix cinnamon and sugar in another bowl (Use shallow bowls for easier dipping). When Churros are done remove from pan and dip each one into butter, then roll in sugar cinnamon mix. Serve with melted chocolate fudge.
