Here's a pretty easy brittle recipe from MS so you know it was good! Pretty easy and you could even add dried fruit to it or dip the edges in melted chocolate. Box it up for Valentines Day too :)
1/4 c (1/2 stick) unsalted butter
1 1/2 c packed light brown sugar
1/4 c honey
1 c fresh nuts (I used pepitas, pecans, sunflower seeds and pistachios) Use your favorites.
Lay parchment paper onto 11 x 17" jellyroll pan - spray with cooking spray and set aside.
Melt butter in sauce pan over med-heat. Stir in sugar and honey. Bring to a boil. Now cook without stirring, until mix is medium amber color and candy thermometer reads 280º - about 6 minutes.
Stir in seeds and cook until mixture reaches 300º - about 2 more minutes. Pour onto your prepared sprayed sheets. Let cool and then break them apart.
