Stracciatella Italian Cupcakes

Playing in the kitchen today. Wanted something different and pretty so....just made a white cake batter (use a boxed mix) for these cupcakes and used the frosting below. So easy.

1bx white cake mix (make according to box directions)

Buttercream Frosting
1 cup (2 sticks) butter, softened
1 tsp vanilla extract
1 1b powdered sugar
1-3 tsp milk or heavy cream
about 1/4c of coarsely grated semi-sweet chocolate

1/4 c chopped pistachios
about 12 chopped maraschino cherries

Using a mixer, cream softened butter and vanilla  until smooth. Slowly add sugar, let butter and sugar mix together before adding more. If you want it a little creamier, add a teaspoon of milk at a time and beat on high until you get the texture you want. I gently stirred in the chopped chocolate and frosted cupcakes.
Roll edges in crushed pistachios then plop some chopped cherries in the middle. Finish them off with a sprinkling of that chopped chocolate. Ta-da! I really forgot how much I love white cupcakes.
