Pizza Muffins

You know I am always looking for cute, easy munchies! I have a 15 year old that likes to "entertain" sometimes.....well, his friends come over to play videos and eat. Anyways, I came across these and knew they would be a hit for my little guy.



3/4 c flour
3/4 tsp baking soda
3/4 c whole milk
1 egg, lightly beaten
1 tsp garlic powder
1 tsp onion powder
s&p
1 c shredded Italian cheese
1/2 c shredded cheddar cheese
1 c pepperoni, chopped up
1/2 c pizza sauce
2 tbsp finely chopped fresh basil

Preheat oven to 375º. Grease a 12 cup muffin pan or a 24 cup mini muffin pan. In a large bowl whisk together your flour, baking powder, and seasonings, then whisk in the milk and beaten egg. Stir in cheeses and pepperoni, let stand for about 10 minutes.
Stir the batter to blend, divide among the prepared muffin cups. Bake until puffed and golden, 20-25 minutes.
Warm up pizza sauce until hot, then stir in 1 tbsp basil. Sprinkle with a pinch of cheese.
Serve your puffs with warm pizza sauce for dipping.

Oh man, these look yummy. I'm pretty sure my husband would love these! He thinks Totinos pizzas are the greatest snack in life :)
