Pumpkin Pancakes

We finally got that cold front in. Whoo hoo! Nothing beats hot pancakes on a chilly morning huh? Well maybe Pumpkin Pancakes. Yep, today was my day to try them out. They were lovely...I promise.

2 c Bisquick mix (We used Glutten-free Bisquick since we a have a glutten sensitive one in our family)
2 tsp brn sugar
2 tsp cinnamon
2 whole eggs
1 can (12oz) evaporated milk
1/2 c canned pure pumpkin
2 tbsp veg oil
2 tsp vanilla
Gently combine your wet ingredients in a large bowl. Add your dry ingredients and mix, if your batter is too runny just add a little more pancake mix.
Lightly grease your griddle and make your pancakes.
These were eaten up quickly and they were glutten free! I can only imagine those of you who are lucky enough to use regular Bisquick will l.o.v.e. these.

These look so fluffy. I like that golden color and, being pumpkin, I know they're delicious.
