Chippy Butterscotch Pudding Cookies



If you make any cookies this year, this is the cookie to try! It is a light and so soft cookie. The texture is so perfect.....add choc chunks....oh my....these were so good. Make a date with them immediately...seriously :)
2 sticks softened butter
1/2 c sugar
1/2 c brown sugar
2 1/4 c flour
1 tsp baking soda
1/2 tsp salt
4 oz instant butterscotch pudding 
1/2 c butterscotch chips (opt)
1/2 c choc chunk pieces
Preheat oven to 350º and line cookie sheet with parchment paper. 
In your  mixer beat softened butter and sugars until light and fluffy. Beat in eggs  until well combined.
Place flour, baking soda, dry pudding and salt into a large bowl, mixing to combine. Slowly add flour mix and chips to your wet ingredients. Mix until just combined. With a medium cookie scoop, place onto baking sheet and bake for about 10 - 12 minutes or until they start to get golden. Let cool for 10 minutes on sheet before transferring to rack to cool completely.

I LOVE butterscotch chips! These sound tasty! I've never made cookies with pudding in them. Can't wait to try it! I mean, seriously... how could that NOT be awesome!?
